Chicken Catcha Tory

From Looneyspoons                                        Makes 4 servings

 

 

 

 

 

4

boneless, skinless chicken breast halves cut into 1 inch cubes

1 cup

Each chopped onions and chopped green pepper

2 cups

Sliced mushrooms

1 can

19 oz tomatoes, undrained, cut up

1 cup

Tomato sauce

1 can

5 1/2 oz Tomato Paste

1/2 cup

Dry white wine

 

 

1 1/2 tsp

Each dried basil and dried oregano

2 cloves

Garlic, minced

 

 

1/2 tsp

Salt

 

 

1/4 tsp

Black pepper

 

 

12 oz

Uncooked Spaghetti or linguini







Directions:

  1. Preheat oven to 350º
  2. Combine all ingredients except spaghetti in a large bowl and mix well. Transfer mixture to a small roasting pan or large casserole dish. Cover and bake for 1 hour, until chicken is very tender.
  3. Ten minutes before cooking time has ended, prepare pasta. Serve chicken and sauce over hot pasta.

 From Eat, Shrink & Be Merry!                                Makes 6 servings

Dressing

 

 

 

 

1/3 cup

Bottled light peanut sauce

 

 

 

¼  cup

Hoisin Sauce

 

 

 

1 tbsp

Red Wine Vinegar

 

 

 

1 tbsp

Toasted sesame oil

    

 

1 tsp

Grated Gingerroot

Salad

 

 

 

 

3 cups

Chopped cooked chicken breast

1 cup

Bean Sprouts

2 cups

Packed, chopped napa cabbage

½ cup

Chopped Green Onions

2 cups

Packed chopped romaine hearts

2 tbsp

Chopped fresh Cilantro

1 cup

Shredded carrots

2 tbsp

Toasted sesame seeds

1 cup

Diced red bell pepper

 

 

Directions:

1.     Whisk together all dressing ingredients in a small bowl. Cover and refrigerated until ready to use.

2.     Toss together all salad ingredients in a large serving bowl. Add half the dressing and toss again. This may be enough dressing for your taste. If not, add more by the tablespoonful until you`re happy with the flavor. Serve immediately.
