I haven't posted in awhile on my menu planning challenge. Things were going really well. I love the control that I feel when I have a plan for dinners and there was much less waste happening in the fridge with buying only what we need for the week. And dare I say, we were even saving money. Particularly with lunches - I wasn't eating out which saved a minimum of $50 a week!
Then... life happened! Yup, I fell off the band wagon and for a few weeks have been winging it and often leaving my poor family to fend for themselves. And yes, buying lunches at the food court again, which is not only more expensive but also usually not very healthy.
I really was doing well - even to the point where I was soaking beans on Saturday night and cooking them up on Sunday for the week's meals. We tend to eat a lot of beans here with a vegan in the house and another son who was existing mainly on lentils, black beans and vegetables for a few weeks.
So many times we think when we fail at a challenge that we need to give it up all together. Not so! Just jump back in where you left off. And that is what I am doing.
Tonight's dinner is Sweet Potato Quinoa Burgers and Moroccan and Rollin' Quinoa Salad (from The Looneyspoons Collection) and a purchased Apple Pie for dessert (the pies from Farm Boy are fabulous - why go through the trouble of baking your own LOL).
I have a few things picked out for the rest of the week too - I just need to write it down in my planner so I don't forget.
