New Year's Day has traditionally been a day for a special sit down meal. I have kept this tradition with our scaled down family in Ottawa since we moved here and had every intention of keeping it today. But... this is what our make-shift dining room table looks like right now (this is a story for another post).
So, no fancy sit-down dinner. Instead, this is what we had:
Good, old fashioned, macaroni and cheese!
Well, they are a bit different than the traditional versions. The first photo is what the meat and cheese eaters in our house had - Smackeroni and Cheese - from the Eat, Shrink and Be Merry cookbook (I have all the cookbooks by Janet and Greta Podleski and love them all - you will see recipes from these books featured often in my menu planning). It has ground beef, tomatoes, and zucchini in it - even fussy kids will eat this and get some veggies in their bellies.
The bottom photo is vegan style macaroni and "cheese" - Garrett tells me it is very good. I will have to trust him on that - I am still afraid of tofu and this version has tofu in it...
